A very beautiful color in the glass. On the nose, lots of flowers, lychee, acacia, a hint of ginger (very light), peach, a touch of pineapple, vanilla, and apricot. In short, a fairly complex nose with a tropical profile. On the palate, this is a creamy wine with a very good balance between ripe fruits like nectarines and peaches and enough acidity with a mineral undertone. An incredibly delicious wine for its price. The finish is medium-long and very pleasant.
3.9/5 on Vivino
Serving:
Delicious wine with spicy dishes like sushi or tuna/avocado/wasabi mayonnaise. Serve at 10-12 degrees.
Also surprisingly good as an aperitif, with a fruity dessert, or with blue cheese.
Storage:
This wine is not meant for aging. It will keep well for 2-4 years but won't evolve much.
Extra Information:
Paul Mas is a well-known house that produces very good wines: Watch a video about the estate below.
Les Domaines Paul Mas is driven by Jean Claude Mas, son of founder Paul Mas. They own a total of 700 hectares of vineyards in the Languedoc in southern France, with an additional 1200 hectares under contract. The vineyards are located close to the sea. They are planted with Syrah, Grenache, Cabernet Sauvignon, Merlot, Carignan, and Cinsault for red and rosé wines. For white wines, Jean Claude has planted Viognier, Sauvignon Blanc, and Chardonnay. Each wine has its own identity and brings out the best of the terroir. The philosophy of the Paul Mas house is to maintain the typicity of the soil and grape variety, while presenting a wine that meets modern consumer preferences; Lots of fruit, concentration, color, aroma, and taste.
Languedoc-Roussillon was the first region in France to be planted with vines when the Romans first arrived. Old bush vines scattered throughout the region produce wines with concentration and depth, which can age for many years, while vineyards along the coast produce beautifully fresh and sweet white wines and rosés, perfect for long summer evenings.

15% of the Viognier finishes fermentation in new oak barrels, followed by 3 months of aging. The rest is aged in stainless steel tanks until blending.
