How often do you talk about the concept of Time in a conversation? "Life is short and time is limited." "We should spend more time together." “Live the moment to the fullness”… The name of this wine came to us during one of those random conversations. Then we developed the idea with more attention to detail — and of course, with our time. Enjoy it in your own way and discover the meaning of time. It's that simple. Carefully crafted for random conversations.
Vivino 4.2/5

Additional Information:

Finca Bacara, founded in 2016, is a project born from the perseverance of its owners, aiming to convey the best expression of wines and old Monastrell vines, recognizing the climate, soil, and environment that have shaped our growth over time. We make our wines with minimal intervention and handle the grapes with extra care. From each grape, we create wines in the most natural and artisanal way.

We champion the authenticity of Monastrell grapes as a tribute to our land. The appearance of the wines is the only thing we leave to chance. It’s up to your curiosity to discover the hidden nuances within.
Our winery, nestled in the southeast of Spain, is located in a high valley 900 meters above sea level, flanked by the cities of Alicante, Albacete, and Murcia.
Monastrell is the native grape variety of the DOP Jumilla, where our exciting project was born.

Hand-harvested. The best vineyard plots are carefully selected based on altitude and soil, followed by a second selection in the winery. Vinification of grapes is carried out separately, depending on ripeness. Fermentation at low temperatures (20–24°C) to preserve the most primitive flavors. Malolactic fermentation in contact with wood.
