Een licht paarsrode kleur, in de neus ruikt u vers rood fruit zoals frambozen, bessen en aardbeien. In de achtergrond een subtiele aardegeur wat enkel nog meer complexiteit toevoegt. In de mond een jeugdige smaak maar ik raad aan deze wijn enkele jaren te bewaren want het wordt beter.  Hij heeft verder een zachte en licht frisse afdronk. Een echt typische "instap" Bourgogne zoals die hoort te zijn!

Serveren:
Licht gekoeld is dit een uitstekende begeleider tijdens een lunch of zomaar op het terras. Daarnaast past deze wijn uitstekend bij een gerecht met paddenstoelen en een stukje vlees. Past ook zeer goed bij een algemene kaasschotel of charcuterieschotel. 

Bewaring:
U kunt deze wijn enkele jaren bewaren en zal zachter worden. Vooral de typische rijping van pinot noir komt hier voor een instap pinot noir al zeer goed tot zijn recht.

Today something unique is happening in this corner of Burgundy. 
By putting their grapes in the same vat, pioneering winegrowers prepare to lay the first stone in what is to become, over the years, the only cooperative winery of the Côte d’Or: la Cave des Hautes-Côtes.

 

FROM NORTH TO SOUTH, FROM WEST TO EAST …

Before telling our story, we should begin by introducing our region.
Viticultural Burgundy is a stretch of vineyards some 250 kilometres long between Chablis in the North, and the Mâconnais region in the South. In the centre of this legendary "ribbon", the vineyards of the Côte d’Or represent the crown jewels for numerous wine amateurs across the globe. The Côte d’Or is, in fact, the combination of the Côte de Nuits (from Dijon to Corgoloin) and the Côte de Beaune
(from Corgoloin to Santenay) - two names that are famous for great red wines made from Pinot Noir and for great white wines produced from Chardonnay. 
But the Côte d’Or has forever included the Hautes-Côtes areas with their picturesque valleys – They are the natural extension of the slopes of "the Côte". Thus we find vineyards at higher altitudes to those of the Côte but benefiting from their own particular geological qualities …
 

NUANCES OF PINOT NOIR AND CHARDONNAY

If the wines of Burgundy enjoy such fame, it is partly thanks to the subtle differences born from the extraordinary patchwork of Burgundy's vineyard parcels. According to the geological characteristics of each parcel, Pinot Noir and Chardonnay acquire beautifully nuanced characteristics in which we find astonishing diversity. A parcel (or "climat" in French) is  a precisely defined plot of land dedicated to vine-growing and which has been known by the same name for several centuries. The soil, the sub-soil, the aspect and the microclimate of the plot confer the essential characteristics and the personality of a "terroir" and thus the wine, within a greater vineyard. In the Côte d’Or, whether you are in "la Côte", or in the Hautes-Côtes, vineyard culture is more than an activity ; it is a way of life….a heritage born from the dialogue of Mother Nature and the creative genius of Man. 
When one leaves the beaten track in search of the Burgundy of the Hautes-Côtes, one appreciates how much courage, intelligence and patience were necessary for men to domesticate these somewhat unlikely vineyard plots !
